Kobe Wagyu beef contains marbled fat up to 25% which is higher in comparison to USDA Prime varieties which have approximately 8%.

  • Intensive Production Process - Cattle farmers must put in the hard yards to ensure their cattle are taken care of impeccably. From specific dietary provisions to comfortable spaces, there are several things that they must ensure. The production costs are also comparatively higher than other varieties, since these cattle require more energy, money, and time.  

  • Special Distribution Channels - Kobe beef is not just ultra-exclusive but is also available through special channels. Those responsible for distribution must ensure they are selling only the highest-quality beef. It is only available from trusted and authorized sellers and frozen meat suppliers in the UAE. With limited supply volumes, the prices naturally go up worldwide.  

  • Lengthy Feeding Process - The feeding process is quite lengthy, and the cattle must be raised for a higher duration than other breeds. The cattle must be fed a unique diet comprising premier grains and other ingredients.  

  • Slaughter & Processing Methods - The tender and unique texture of Kobe beef is ensured through special processing and slaughter methods. People working here are trained to ensure that they follow the necessary steps. The meat is removed with care from the carcass, and this enables the preservation of the marbling quality in the meat. It must be inspected and graded accordingly. This is another reason behind its sheer exclusivity.

Kobe beef must be graded as per strict criteria, including that the cattle can only be between 28-60 months of age. They can only be uncalved cows or bullocks and the carcass should get an A/B Meat Quality score. The Yield Score should be 4 or 5, while the Marbling score should be at least 6.
